I battered some peanuts
and fried them with butter
(a generous amount that is)
I whipped an egg
with a little cake flour and organic milk
whipped until smooth and creamy
and poured them onto the peanuts
Then I dropped in shredded cheddar cheese
and turned to low heat for it to melt
When the pancake was soild yellow
Yes,the color of a fresh corn
it was just at the right moment to be eaten
soft and custard like
Perfect under a spoon of blueberry jam
When I become a grandma
I will be just as happy
to cater to my Fangfang's every craving
of a mid-morning pancake
as my own nan did
on countless mornings
of the freezing winter kingdom where we both came from
making a pancake from nothing
but ungraded flour, two freshly laid eggs
and some of our hometown's finest sesame oil
